Masala Puri

Whole wheat masala puri is a popular Indian street food that offers a healthier twist on the traditional recipe. It features crispy, deep-fried pooris made from whole wheat flour, filled with a flavorful and spicy potato curry. The combination of the crunchy puri and the tangy, spicy masala filling creates a delicious and satisfying snack or light meal.

Ingredients

For the Puri:

  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 1 tablespoon ghee or oil
  • Water, as needed

For the Masala:

  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 dried red chili, broken
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder  
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup water
  • Fresh coriander leaves, chopped

Instructions

Step 1: Prepare the Puri Dough

  1. Combine whole wheat flour, salt, and ghee in a bowl.
  2. Gradually add water and knead into a soft, pliable dough.
  3. Cover the dough and let it rest for at least 30 minutes.

Step 2: Roll and Fry the Puri

  1. Divide the dough into equal-sized balls.
  2. Roll out each ball into a thin, circular shape.
  3. Heat oil in a deep pan.
  4. Carefully drop the rolled-out pooris into the hot oil.
  5. Fry until the pooris puff up and turn golden brown.
  6. Remove the pooris from the oil and drain on paper towels.

Step 3: Prepare the Masala

  1. Heat oil in a pan.
  2. Add cumin seeds, coriander seeds, and dried red chili. Let them splutter.
  3. Add ginger and garlic and sauté for 30 seconds.
  4. Add onion and tomato and cook until soft.
  5. Add red chili powder, turmeric powder, garam masala, and salt. Mix well.
  6. Add water and bring to a boil.
  7. Simmer for 5-7 minutes, or until the gravy thickens.
  8. Add fresh coriander leaves and mix well.

Step 4: Assemble the Masala Puri

  1. Place a puri on a plate.
  2. Top with a spoonful of the masala.
  3. Garnish with chopped onions, tomatoes, and coriander leaves.
  4. Serve immediately.
